Pengaruh Suhu dan Konsentrasi Oksigen Udara Ruang terhadap Laju Respirasi Jamur Merang (Volvariella volvacea) selama Penyimpanan
Abstract
Mushrooms have a short shelf life. Therefore, an effort is needed to maintain the quality of mushroom by lowering the temperature and oxygen concentration of the storage room air. This study used a completely randomized design with temperature variations of 5 ° C, 15 ° C, and 28 ° C and variations in oxygen concentration of 3%, 12%, and 21%. Respiration rate measurement using a closed system. Respiration rate is calculated using the Michaelis-Menten equation. The interaction between temperature and oxygen concentration affects the respiration rate of O2 and RQ. The best treatment in this study is storage at 15 ° C with storage of 3% oxygen concentration.
